Our newest exploration in co-fermentation that is truly a fruit medley. Aplomb—can be broken down into four different parts that eventually came together after several tasting sessions. In the end, we felt all the pieces tasted better together than isolated by themselves. The first part is a cider made with Gravenstein apples co-fermented with Ruby Plums for six months. Adding a tannic heavy cider with a deep red hue to the blend. The second part is a cider made with Blue Pearmain apples co-fermented with Peaches. Making a tart and extremely-fruity feature in the blend. The third part is a cider made with Jonagold apples rested on Frontenac Gris grape skins for two weeks before racking off of the skins to age in stainless tanks. Creating elegant floral notes for the overall blend and adding to the complexity. The fourth and final piece, is a single varietal Esopus Spitzenberg cider used to balance the overall cider, and remind us that—Aplomb is a cider first and foremost. After all of these parts aged for a year in tank, we blended them together to meld before bottling. The final blend is wildly fruity, with notes of dragonfruit, passionfruit, gooseberries, and white melon. Overall, it drinks like nothing else we have created so far. Somewhere between a white wine and peach juice. There is a ton of texture, that we feel adds to the grippy and drippy flavors. Aplomb is something that speaks to our process—let fruit and flavor guide the best way forward. We found that this approach led us to ultimately bring all these parts together.
