Our newest exploration in co-fermentation has us leveling a suspicious gaze at the stars.
One of those blends that came together in the cellar -- a marriage of circumstance that defied the odds; Cosmic Drama is a happy accident: a cuveé of multiple spontaneous co-fermentations, apples, grapes, blueberries, and blackberries all find balance and elegance in this gently carbonated co-ferment.
Cosmic Drama—can be broken down into two parts:
The first part is a cider made with Gravenstein apples, co-fermented spontaneously with blackberries grown on our farm and wild lowbush blueberries grown by Blue Hill Berry Company.
The second is Blue Pearmain apples co-fermented spontaneously with Chancellor grapes and given a multi-day rest on the grape skins.
The final blend is aromatic and expressive, with notes of mature red fruit, ripe figs, and blackberry jam. Overall, it drinks more like a dry rosé or an orange wine—with additional notes of dried cacao and an earthy funk. Lots of texture in the blend with natural bubbles to top it all off.
