A single-orchard cider made with Goldrush, Chisel Jersey, Bulmer’s Norman, Grimes Golden, Ashmead’s Kernel, and Kingston Black apples, this iteration of our Groundwork series features barrel aged ciders from three different harvest seasons of Hoopers orchard in Monroe, Maine.
With 2021 Grimes Golden & Goldrush; 2022 Chisel Jersey, Bulmers Norman & Kingston Black; and 2023 Ashmead’s Kernel, each fermented & aged in oak barrels before resting together-- young and old-- in stainless to meld together before bottling. In many ways, this blend was inspired by the tradition of lambic brewers and whiskey distillers — combining barrels with multiple age statements to reach nuances that present both young and old flavors. In this blend you’ll taste 3-year old cider, 2-year old cider, and 1-year old cider. The overall blend features aromas similar to lambic beer or aged Champagne, with notes reminiscent of stone fruit, apricot, and vanilla oak. Although this cuvée features some tannic forward fruit, the profile is balanced in acid, tannin and barrel character.
