Our newest batch explores the world of barrel-aged single varietal ciders. Underveil is a cider made with Harrison apples, fermented with native yeasts in stainless, then aged in Sauternes barrels from Bordeaux, France for one year. Blend focuses on the singular fruit forward notes from Harrison apples and the floral notes from noble Sauternes wines. The drinking experience mimics some of the delicate flavors found in mix-fermentation beers with additonal notes of green apple, honeysuckle, quince, gooseberry, and toasted oak.
