Wend is made with apples foraged from abandoned orchards, woodlands, and wild seedling groves throughout central Maine. Each location added depth and complexity to the overall blend, and after two months of foraging in 2022, we ended up pressing five barrels worth of cider comprised of 30% bittersweet, 30% bittersharp, 20% sharp, and 20% aromatic/sweet apples. The cider was fermented with native yeasts for 120 days, before being racked to neutral oak to age for a year. The cuvée features flavors of peach jam, dried mangos, aromas of cedar wood, spice box, and finishes with a round mouthfeel and soft tannin structure.
