This is Big Fish Cider's desert cider. It is made in the method of the Canadian Fire Cider, where first the fresh pressed juice is reduced over fire at a local maple sugar camp, which concentrate the sugars and the flavors. Then fermentation begins, and it is a long slow process, this batch took 7 months to ferment. The result is a higher alcohol, (12.5% ABV) and very sweet (18% residual sugar) cider that has flavors of caramel mixed with the apple. It is truly a delightful after dinner drink, that warms you as you drink, like the fire that created it.
