This single varietal came from our Hightown orchard at 3,200 feet in elevation. This cider expresses the Northern Spy to a tee with bright acidity, pepper notes, and minerality that is common in Highland grown apples. There is a fresh apple that comes through mid-palate, and ends with soft tannins and a lingering acidity that begs for another sip. The 2021 vintage won Virginia Governor's Cup gold medal.
Notes
Fermented in Stainless Steel, using a neutral white wine yeast. Racked immediately upon complete fermentation, Aged 6 weeks. Residual sugar is 1.25%, but tastes like an off-dry cider due to acidity.
