Orchard Notes: Location: Sierra Foothills Elevation: 2600’ Soil: Decomposed volcanic rock Blend: Our flagship cider incorporates a blend of five apples in order to achieve balance of sugars and acids. Cidermaking: Our Brut cider was crushed, pressed, and transferred to a stainless steal tank for 3-day cold settling. Juice was then racked into neutral French Oak barrels where it underwent a 10-day fermentation to complete dryness (no residual sugar). After primary fermentation was complete, malolactic fermentation was restricted, in order to maintain a bright, acidic finish that makes our cider an excellent pairing with food. The cider was then aged sur lie for twelve weeks to round out the mouthfeel. Finally, the cider was then transferred to brite tank for five-day cold stabilization and carbonization before being kegged/ bottled unfined and unfiltered.
