Winemaking:
A Co-ferment of 75% Syrah and 25% Viognier was fermented a 100% whole cluster. The wine was foot treaded daily for a week, then one punch down a day until fermentation was completed at 21 days. It was then pressed off and aged in neural French Oak barrels for 11 months. It has been bottled unfined and unfiltered.
Tasting Notes: Made in the style of Côte-Rôtie, a paradoxical pairing of meat aromas (including bacon) and floral aromas. Fragrant notes of black cherry, raspberry and macerated strawberries and floral violet. Savory aromas of peach yogurt, white pepper and savory herbs finish the high tannin wine off. This wine is young and can be enjoyed now and can be cellared for years to come.
