Varietal: 100% Zinfandel from vines planted in the 1950s
The Zinfandel we picked for this cider comes from the “Del Barba Vineyard” in
Contra Costa County. The zinfandel was harvested at 23 brix, hand-sorted and
moved to t-bins 25% whole cluster and 75% destemmed. The must was allowed to
macerate for two days before the zinfandel juice was saignéed and blended
with fresh pressed cider juice into old french oak barrels. The juice fermented spontaneously to complete dryness and then aged (sur Lie) for 12
months before being bottled unfined and unfiltered.
