Varietal: Organic Rosé of Syrah from our organic estate vineyard. The Syrah was harvested at 23 brix, hand-sorted and
destemmed into 1/2 ton macro bins. The must was immediately pressed off into
neutral French Oak barrels, where it was fermented spontaneously to complete dryness and then aged (sur Lie) for six months.
The Rosé was then blended (25%) with our finished brut cider (75%) into neutral french oak barrels for eight months before being bottled unfined and unfiltered.
