The Coferment adventure continues! This time with our own organically grown Macoun apples and a mix of Pinot Noir and Saparavi grape skins from Damiani Winery just over the hill in Hector. We picked up the red grape skins just hours after pressing and they were hot and steamy from an active fermentation. Inoculating apple juice with a massive yeast load from a just-finished red wine fermentation results in the fastest fermentations we ever see in our cider barn, finishing up in less than fourteen days and making them an easy choice for the very first releases of the growing season. This cider was bottled one week before shipping to you and captures the fruity freshness of the fall fermentation frenzy. You can drink this celebratory pet nat now for fun fruity fizz with a touch of residual sugar, or let it ferment and settle a bit and it will be dryer and more savory.
Pair with roast turkey (obviously!) or roast duck with cranberry orange glaze.
