The first thing I noticed about LynOaken Farms Golden Russets was they were big with a beautiful blush on them and very ripe. All of the varieties we purchased from Lynoaken last year had higher brix (sugar content) than we normally get at our farm, leading me to believe that they have a warm site. Set on the shore of Lake Ontario, they are just far west enough that they catch weather influenced by the Niagara Escarpment. I think the ripeness really comes through in the cider-- the nose is so sweet and just redolent of very ripe melon and stone fruit. It also has a raw honey elemment, which is a classic Golden Russet aroma.
Pair with Moroccan lamb stew with apricots and warm spices or roasted sweet potato with kimchi.
