2021 It’s a rare treat to discover bulbous pearls of pear when foraging for apples; but when we do, we jump for joy! This perry was barrel-aged for 2 years and then bottled with a dose of apple juice from our 2020 forage crop for a gentle secondary fermentation in bottle. The result is a delicious oxidized wine expressing a refreshing interplay between volatile acidity and sweet appley-pear notes. 2020 did not lead us to any pear pearls, but we have high hopes for 2021.
Fable Farm & Fermentory is a farm-based winery producing aged wines and vinegars. We work with local flora, microorganisms, and the overall Ecology to co-create the character of our living wines. We produce wine primarily from apples, pears, grapes, honey, tree saps, and the blending thereof, while sometimes incorporating other small fruits and herbs that we glean and grow in the verdant foothills of central Vermont.
