This dry, mild sparkler is a refreshingly tart accompaniment with breakfast, lunch or dinner. A combination of co-fermentation and a steeping, foot stomped blackcurrants join forces with apples in this two-vintage cider medley that aged in barrels for 4 years before bottling. 2020 + 2021 is celebrated and expressed through the fermentation, maceration and merging of these two delicious fruits. After a prolonged barrel maturation, maple syrup was added to the cuvée for a mild secondary fermentation in bottle. Great Grandma Rosa was 4’ 9 and 150 pounds- a petite, yet robust subsistence homesteader perched upon the base of Mt. Etna in Sicily. When her son Raphael (our Grandpa) turned 1, she and the Mr. packed up shop to set sail for the New World in pursuit of an “American Dream.” They settled in tenement housing along the Lower East Side of Manhattan among fellow Italian immigrants, and began working 80 hour weeks in the factories. As soon as Grandpa was old enough, he diligently began climbing the ladder of economic opportunity, until his mother Rosa no longer had to labor so.
