Single variety of Porter's Perfection estate grown, organic fruit. An old English bittersharp variety used exclusively for cider making. These trees are balanced and resilient. Made in the Col fondo style (bottle conditioned) and aged sur lie (on the lees). A more natural style of cider making leaving lees (yeast from fermentation) in the bottle for additional character. Aged for 16 months in bottle & offered as a special release to our Cider club.
