Spiced Pear Cyser
Delicate alfalfa honey was paired with a whole bunch of aromatic Bartlett pears for fermentation. The finished mead was lightly backsweetened with Colombian panela sugar for a lightly caramelized character, then aged on dried pears, cinnamon and vanilla beans. A touch of spicy ginger juice was the perfect finishing touch to complete the poached pear inspiration. A perfect after-meal sipper or even drizzled over fine vanilla ice cream.
