Drawing from research into the oldest-yet alcoholic beverage from China, this off-dry mead made with Washington wildflower honey combines the cidery acidity of Pacific Northwest black hawthorn berry with locally grown holy basil. The results have a complex, enticing nose with hints of clove and basil combined with the indescribable hawthorn. Bright body with spritely acidity and lingering finish.
