This fine pear vinegar is a natural extension of our experience producing ice cider. Like the real Balsamic vinegars of Modena, we concentrate the sugars of the fresh-pressed pear juice, ferment it into cider, and then acetobacter ferment the cider into vinegar. The result is a bold, sweet, fruit-forward vinegar. Fresh and electric with acidic punch. All of the sugar and flavor comes from the pears it is made with.
