Our organic estate blend. Every apple in this sparkling cider was grown in our Ohio family orchard with no pesticides, herbicides, or fungicides. Our growing strategy aims to support the plants, animals, insects, and microbes that we collaborate with and to foster a robust, resilient ecosystem. This is a blend of everything that we harvest each year: cider apples from the US, France, Spain, England; reliable local Appalachian varieties; Kazakh and other seedlings; maybe even a few pears !

*For the wine/cider nerds: fermented in stainless steel tanks & neutral oak barrels. Non-disgorged, traditional method sparkling wine. Rustic and unfiltered, aging on lees. Oxidative, with a pleasant phenolic bitterness.*
