We start by harvesting apples at the peak of ripeness from the California Cascade and Sierra Foothill regions near our home in Chico. American heirloom varieties that have a rich tradition in cidermaking are used- King David, Arkansas Black, and Winesap along with Golden Delicious. Harry Master's Jersey and Yarlington Mill, English bittersweet cider apples, add some soft tannins to the blend. The fresh pressed juice is fermented in neutral red wine barrels.
