This year's Elliot batch is truly something special and will carry that reflection through the variants. Our ferment was extremely healthy this year and had no issues chewing through the fermentable sugar, pushing the ABV to 15+%. The result is a "drier" version of this classic whole fruit melomel, reminiscent of the "old days." While on paper, this mead has considerably less residual sugars than the previous few years of Elliot, on the palate, it is a flavor explosion. All the keynotes of the traditional Elliot profile with a more sophisticated edge to it that we are so excited to see how it will evolve in the cellar. This is certainly a mead that will hold up and to many years of aging. But fear not, it is drinking beautifully right now and the ABV is a bit deceptive. It will be more than a year before we make the next batch of Elliot so we suggest you stock up a bit while its around.
