Arista marks the chance to resurrect that which was lost. To work with what we have as we build something better. Like our farming culture at large, we once had it all and like Aristaeus we went chasing Eurydice and fell afoul of the Gods.…May that we are fortunate enough to raise a hive from the carcass.
Arista is a blend of wild and sustainably grown apples. Subtle aromas of tart cherry and petrol, apricot and dates on the palate balanced by a firm acidity and crisp lively finish. Dosaged with a tiny amount of local honey.
Traditional Method -0% RS -13 months en tirage at first release. Hand disgorged. 150 cases produced.
At Metal House Cider we are dedicated to creating small-batch ciders reflective of the terroir where we live and work, that is the Town of Esopus, in the Hudson Valley, New York. Our ciders are made in the methode champenoise with a lot of toil and love and time. All the apples we use are sourced from either untreated/abandoned orchards including the one we live on, or the historic Esopus orchards we are hoping to resuscitate following biointensive/biodynamic protocols, and the occasional wild catskill crab. All aspects tree-to-label are done in house by co-owners and cidermakers Matt DiFrancesco and Kimberly Kae.
