Methode Champenoise. Our Debut is made from 100% untreated, unsprayed local apples we picked from our own orchard and two other local abandoned orchards in the Fall of 2015. We use a rack-and-cloth press and fermented in glass and stainless to 0% RS bottle-conditioned in the Spring of 2016, with first release in March of 2017. It is very dry and crisp, with cool savory character, broad texture, and refreshing mouthfeel. 36 months en tirage. Disgorged.
