This semi-dry cider is a blend of York Imperial, Stayman Winesap, and Yates apples harvested from the Orchard at Altapass. Each variety contributes its distinct character: bright candy-apple aromas from the Stayman; soft tannins and deep-straw color from the York; and a mineral finish from the Yates. Fermented in October, the varietal ciders were matured on their lees for five months before final blending and bottling.
