Winesap apples from Bent Apple Farm in Lansing, NC were milled and the pomace allowed to macerate for two weeks outdoors. The "self-pressed" juice was racked to barrel and allowed to spontaneously ferment with the apples natural micro-flora. The fermented cider was then bottle conditioned.
Molley Chomper makes hard cider in Ashe County, NC from heirloom apples grown in the high country of North Carolina and Virginia.
We work with small orchards that grow heritage cider and dessert apple varieties. The apples are harvested at peak ripeness and pressed at the cidery each Summer and Fall.
