The blend makes the cider. New York Cider Company again celebrates that philosophy with HEDGEROW #3. A minimum of 30 apple varieties creates a complex, dry sparkling cider with substantial body, solid tannins, and light acidity. The mix includes exquisite heirloom American and English apples, along with prized wild seedling fruit foraged from abandoned orchards, farmyards, and even hedgerows. Given the fine fruit and our belief in traditional cider making, we thought natural fermentation and bottle conditioning were the best way to let them—and nature—speak for themselves. Enjoy cool.
