Refreshingly tart, full-bodied, and dry, ITHACA SHARP #3 celebrates our hometown and the extraordinary apples that grow here in the Finger Lakes. We picked much of the fruit from rescued 150-year-old Newtown Pippins and other trees we hold dear. These craggy antiques are remnants of the original orchard that once graced our 1820s farm—where today we craft hard cider using traditional methods. Ithaca Sharp #3 is spontaneously fermented and aged on the lees for more than a year. Wild yeasts impart complexity to the Newtowns and the blend’s other apples, which include GoldRush and Rhode Island Greening. Effervescence develops naturally in the bottle. Enjoy cool.
