Nearly 15 years ago Kris and I drove an hour north to see an apartment in Pacifica. It was dark when we arrived and the agent had given us the lock box code to "have a look for ourselves and get back to him." We were greeted by aged carpets and rusty metal trim on the windows and railings from the thick ocean mists -- and an endless ocean view interrupted only by the endless stars. We knew it had to be ours.
On a clear night (rather unusual for Pacifica) we began one of the first chapters in the story of us. This cider, aged for 18 months in a gin barrel from Hinterhaus, has a beautiful floral character and a clarity that conjures ocean breezes from an evening long ago.
Notes: jasmine, oak, saffron, Candied ginger, bruised thyme, cut spruce, and mint
