Our Gold Medal winning cider. A single-varietal cider made with Northern Spy apples that were from an abandoned orchard in the Wynola district of Julian, San Diego County, California. This orchard has since been rehabilitated so this particular cider will never exist again once sold out. The apples were smaller than normal and produced a sweeter caramel flavor than normally found in this varietal. The cider was cold fermented on the native wild yeasts for a long period in a stainless tank to retain the caramel character then aged in bourbon barrels to accentuate and provide structure. It has residual sweetness with light balancing acids and tannins. 10% ABV Enjoy at cellar temp (55F)
