The northern spy apples for this cider were late harvested in a wet year. After pressing the juice was slow, cold fermented then aged in a pommeau barrel to soften the cider's bright edges until just right. This dry, complex cider has just the slightest hint of caramel, bright acidity, spiciness, and a full mouthfeel.
