Originating to our inaugural 2018 harvest! First we froze three tanks of apple juice (one each of Ben Davis, Northen Spy and Honeycrisp), extracted the sweet concentrate that remains unfrozen, and barrel aged for 3 years. This is a rare opportunity to try an ice cider that was fermented naturally. A concentrated, higher ABV dessert wine that shares characteristics with fine European aperitifs. Rich, caramelized apple flavors with a unique combination of bright acidity and umami reminiscent of ponzu.
