New York State Sparkling apple-grape wine
A blend of 50% bittersweet apples (Harry Masters and Major) and 50% red grapes (Marquette from the Catskills). For this co-ferment we buried the whole grapes in apple pumice and allowed it to macerate for 17 days, then bottled Pet Nat and aged for 3 years before release. Shows caramelized fruit and salty-tannic notes, slowly opening to revewal lush fruit of both the apples and juicy red grapes, and ending as a highly quaffable chilled light red or rosé. Rewards decanting or enjoying across several days as it evolves very gracefully with oxygen exposure.
