We are a small family owned cidery and holistically managed orchard in the western Catskills town of Callicoon.
Our orchard-driven cider reveals the distinct qualities of each year's fruit. We never add other flavors or colors, and our ciders tend toward the dry end of the spectrum. Hence, all the flavors and textures shine through without the obscuring veil of excess sugar.
We grow 54 varieties of heirloom cider apples, and 7 of perry pears in rocky clay at 1200’ on a south-facing slope overlooking the Delaware. Our orchards are managed in cooperation with nature. This fruit and the fruit we buy from our area grower partners, has the complex aromatics, sharp acids, and tactile tannins needed to ferment and blend ciders with depth and nuance.
Owners Doug Doetsch (5th generation Callicoon resident) and Susan Manning are committed to sustainability, and thus have created the world’s first Passive House certified cidery with production level below, and tasting room / restaurant above.
The cidery enjoys stunning views of the Delaware River Valley. In addition to being a great place for small batch cider paired with delicious local food, we are the perfect place to host your wedding, private function or corporate event.
