Subtly complex and dry with hints of creamy, ripe melon and a touch of oak, Night Pasture is made from a blend of Gala and Spartan ciders. It then rests for eight months in oak wine barrels for malolactic fermentation, producing a flavor profile rarely found in ciders. To finish, we blend it with Liberty cider to balance flavor and acidity. It’s a traditional, still cider—a cider for wine drinkers—with an overlap of some white wine flavor and softness. Night Pasture is named after our oldest orchard, where earlier generations of farmers turned out their livestock at the end of the workday. Today it’s a favorite spot for painters, dancers, apple pickers, skiers, and red foxes.
