This 2017 edition of our flagship cider features tannic, bittersweet apples that are blended with carefully selected heirloom and common apples varietals. It is dry, but not parching with a good amount of body and rounded acidity. This cider is blended from multiple batches, including some that have gone through partial malolactic fermentation. Cultivars of apples used in this blend include: (Bittersweet) Ashton Bitter, Chisel Jersey, Dabinett, Ellis Bitter, Yarlington Mill, (Heirloom) Ashmead’s Kernel, Esopus Spitzenburg, Northern Spy, Wickson, (Common) Idared, Shizuka, Pinova, Macoun, and Golden Delicious.
