Holdfast borrows from French pommeaux and Spanish sherry traditions to make something altogether new. Pommeaux are normally fortified ciders made with full residual sugar, but here we fermented two small lots of 2020 & 2021 Auguste Cerise completely dry. Similar to crafting a dry sherry, we then fortified with brandy and aged in cognac and sherry casks for 4 years. A delightful aperitif with dried fruit and almond notes. 19.5%ABV
Small batch cider made in far south Austin, Texas. We make fruit-forward, full strength dry ciders from 100% pressed juice (not concentrate).
