Listed as a wine in some places, and a cider in others, it can be difficult to nail down what exactly a cyser is. Cyser takes much of its look and flavor from its slightly more well-known big brother: mead, a beverage made by fermenting honey and water. But unlike mead, where honey serves as a base and its main source of sweetness, cyser gets its profile and sweetness from apples in addition to honey. Cyser is created by fermenting honey and apple juice or cider together. Bees and apples—an orchard in a glass.

Apples. Honey. Yeast. The recipe in its most basic form is so simple that it comes to no surprise that it dates back centuries ago to the earliest hours of mankind. In this year’s release, we have departed slightly from previous versions. We have combined more of our tannic apples than in previous releases. The honey, as always, comes from hives on our organic farm where we have planted year-round pollinator forage. The honey and the apples both have the terroir of our farm. We have left a touch of unfermented honey for sweetness and mouthfeel and slightly reduced the carbonation over last year’s release. Let us know what you think.

The Cider Farm is a cider and spirits brand based on an organic orchard in Mineral Point, Wisconsin. The Cider Farm grows only true cider apples, apples cultivated for making alcoholic beverages, not for eating. These apples have tannins, which give depth of flavor and mouthfeel to the beverages they comprise. The Cider Farm produces a rang of ciders from its European cider apples as well as America's only apple brandy made from true cider apples. These products are available throughout Wisconsin and in the Greater Chicago market.
