Apples. Honey. Yeast. The recipe in its most basic form is so simple that it comes to no surprise that it dates back centuries ago to the earliest hours of mankind. In this year’s release, we have departed slightly from previous versions. We have combined more of our tannic apples than in previous releases. The honey, as always, comes from hives on our organic farm where we have planted year-round pollinator forage. The honey and the apples both have the terroir of our farm. We have left a touch of unfermented honey for sweetness and mouthfeel and slightly reduced the carbonation over last year’s release. Let us know what you think.
