Single-varietal cider wild-fermented from 100% Wickson dry-farmed and organically grown by Vulture Hill Orchard in Sebastopol. This variety was bred in Humboldt County, Northern California, by apple breeder Albert Etter, in the early 1900s, and introduced for sale in the 1940s. Bottle-conditioned for natural effervenscence. Full-bodied, with a long finish, plush, vibrant, and zingy, with a herbaceous lemon curd character and flinty minerality. Unfined, unfiltered, minimal sulfites.
