Founded in March 2010 by Mainer Eli Cayer, Urban Farm Fermentory (or UFF) is an experimental fermentation center and community engagement hub. We center foraged and farmed local and seasonal ingredients as much as possible to highlight and preserve Maine's unique terroir. Our fresh-pressed Maine apple cider is spontaneously (or wild) fermented in a traditional, Farmhouse style until it is bone dry & tart. "Spontaneous fermentation" utilizes naturally-occurring yeast in the air and on the fruit, which means even the yeast culture in our cider is local. We apply a similar focus and set of principles in crafting our sparkling probiotic Jun (NA) and Kombucha teas, gruits, beers, and our meads (honey wine).
