While quince is still a relatively unknown fruit, at WildCraft we love to showcase the diverse flavors this ingredient offers. Elder Quince is a robustly floral cider made from quince varieties that are planted, grown, and harvested at the biodynamic WildCraft Orchard at Meadowview Farm. Three hand-picked quince varieties are shredded and lightly fermented on skin for two weeks prior to pressing, then naturally aged for six months, transforming the fruit into wine. This wine is blended with cider of Jonagold apples and then ice-conditioned with elderflowers.
At WildCraft Cider Works, we pride ourselves on developing innovative, artisanal dry ciders inspired by traditional and wild methodology. We insist on whole fruit and botanicals grown in Oregon to create pure ciders without artificial flavorings, sulfites or added sweeteners. WildCraft cider is uniquely dry cider unpasteurized & bottle conditioned. We consider ourselves stewards of the outdoors and always act consciously to ensure that our ingredients are regional.
