Deacon John is a tribute to John Weeks (1757-1821), who lived in our farmhouse and
was a deacon in the local church. Its process reflects how American colonialists made cider. It was fermented then aged on its lees in barrel. The 2022 vintage is a blend of Golden Russet, Kingston Black, Porters Perfections, Honeycrisp, Ellis Bitter, and Northern Spy. Bottle conditioned with natural bubbles and sediment. This cider is dry, clean, and full of flavor. Medium oak and tannin. 34 cases made.
