Kingston Black is a famed English bittersharp originating from Kingston St. Mary in Somerset, where residents called it "the black apple". Rich in tannins and acidity, it is known for its superior cider qualities. It is also notoriously difficult to grow. This cider is a blend of predominantly Kingston Black, another English apple Dabinett, and Shizuka. Arrested fermentation left moderate residual sugar and it was bottled still.
