Semi-Dry and full-bodied. Good things come in small quantities. In our orchard, Row 25 is home sweet home to the English cider apple Kingston Black. It is renowned for its full body, high tannin, and balanced flavor. It is considered one of the best cultivars to produce a single varietal cider. Finicky to grow and low in yield, it takes a lot of effort to get a little of its precious juice. The apples are hand-harvested in late October, and slow cold fermented. It then goes through a secondary fermentation in the bottle to produce a lively, frothy effervescence. Sediment is normal.
