A blend of Anjou and wild foraged pears. The Anjou pears are dry farmed and grown in a manner taking direction from how the wild pears grow - limited intervention.
Produced traditional method, with an in bottle fermentation producing fine silky bubbles. Hand disgorged with no added sugars, retaining balanced sweetness with unfermentable sugars naturally in pears.
Aroma: Honeysuckle, white flowers, and biscuit
Tasting notes: Honey, red clover, hint of strawberry, dry finish.
