Our Pet Nat uses only the natural sugars in the grapes for fermentation. The wine is bottled before fermentation is complete, capturing the soft bubbles and resulting in a lightly sparkling wine that is both fresh and earthy. This technique, in contrast to the Champagne method, is called méthode ancestrale. Source of fruit: White Birch Vineyards, Skaneateles Lake.
