The first in a series exploring the symbiosis of APPLE and HOP, showcases crisp and spicy, heirloom Stayman’s Winesap apples together with fruit-forward and pine nose with crushed gooseberry and grape notes of Nelson Sauvin hops for a delightful modern variation on traditional dry cider. This is one of the most fun ciders we make. We prefer to open these after 6-8 months of aging. The hops settle in nicely with cider over time. We love making hopped ciders and have a blast experimenting in this space. Look out for more releases of dry-hopped ciders to come!
The 2021 crop of Stayman’s Winesap produced well, with higher sugar concentration from long hot days in the sun and ample rainfall. The apples were bursting in size and produced a generous yield of cider this season.
