Brianna is such a luscious grape, and pet nat is the perfect style to showcase the kaleidoscopic flavors it offers. In addition to primary fruit flavors (passionfruit, guava, white peach), the secondary flavors released through fermentation are equally compelling (toast, white flowers and boxwood). Brianna reminds me a little of Sauvignon blanc in that way - lots of intense esters and thiols!
This pet nat is so fun to make - a cool to cold fermentation in stainless keeps the wine as bright as possible, and we just watch the brix levels drop slowly. The decision to forgo disgorging means there will be sediment in the bottle.
