Our first-ever cider was a serendipitous project in 2022. My favorite vineyard, Glaciers Edge Gardens, has apple trees throughout the adjoining prairie. I went through and tasted them out of curiosity and found that some were highly tannic, some were bitter, some were acidic, and one in particular tasted just like grapefruit. Needless to say, it was intriguing. A couple months later we stopped by to pick the apples. We sweat them in our walk-in cooler for a month and then ground and pressed them to a 15 gallon damejeanne.
Uncultivated apples, foraged and wild-fermented. Tannic, complex and vinous.
