Made from 80% Bartlett pears grown by Francis Delemano, 10% wild foraged pears and 10% Ellis Bitter apples. Fourteen day maceration on the skins. Wild yeast primary fermentation in stainless steel.
In-bottle secondary fermentation. A bit of sour funk, like Basque cider. 25 cases made.
Eve’s is an orchard-based cidery producing Traditional Method ciders at the intersection of the Southern Finger Lakes and the Northern Appalachian Plateau. Our best days are spent outside in the sun and rain growing apples on steep hillsides and rolling them down to the cidery.
